St. Kitts is what the Caribbean felt like before the mega-resorts took over — and that's exactly the point. The island is dominated by Mount Liamuiga, a dormant volcano you can actually hike into the crater of, passing through rainforest and cloud forest on the way up. Brimstone Hill Fortress, a UNESCO site, is a massive 17th-century citadel perched on a volcanic bluff with views across to five neighboring islands. The beaches are gorgeous and uncrowded — South Friars Bay has calm water and a couple of beach bars, while the black-sand beaches on the Atlantic side feel almost wild. The scenic railway, originally built to haul sugar cane, now loops the island and is the last operating railway in the Eastern Caribbean. A plate of goat water stew at a local spot runs about $6 and is worth every penny.
